Publix’s existing facility processed standard dairy, but they wanted to go a step further to incorporate extended shelf life (ESL) dairy into their in-house manufacturing in order to eliminate the need for third party suppliers. Accurately budgeting for the project proved to be a major challenge. The original plans were incomplete and once further detail and clarification was factored in, the price tag was significantly over budget. |
